Normally, I only drink coffee on weekends.
Yep, true story.
But, today -
TODAY HAS BEEN A MONDAY FROM HADES.
And because of this, it required copious amounts of freshly brewed coffee. With creamer.
Why has it been a Monday from Hades? I have a theory: Everyone here is so tired of winter and being cooped up and it snowed again last night and it is snowing now and it is supposed to snow some more later this week and WE HAVE ALL OFFICIALLY LOST IT.
I think that most people I interacted with today had an overall feeling of despair and desperation and a heavy dose of cabin fever and we all wanted to lay down on the floor and curl into a tight ball and cry. But for some reason that isn't socially acceptable. So instead there was a lot of snarky-ness and snippy-ness today. One might even say a plethora.
Therefore, I have decided that the only thing that could remedy this state of affairs is a hot cup of coffee with this vegan non-dairy creamer stirred in. Here you go, Northeast/The Rest of the World...this is my get-happy gift to you. (Imagine me dramatically sweeping my arms wide and acting sort of like Effie Trinket from The Hunger Games right now.)
Oh, it's good, this creamer. It makes a Monday from Hades A-okay. Rich and just barely sweetened by the medjool dates with hints of the right amount of vanilla.
And even if your Monday isn't one straight from Hades (I hope it's not), this is a divine little treat that'll make any day better. And don't skimp on the coconut milk - it's chock full of healthy fats and good for you. Obviously, it needs to be consumed in moderation like almost everything else and you can read more about it here.

Vegan Coconut Creamer
1. Open up your can of coconut milk. Scoop it out into a blender or food processor.
2. Add the dates and vanilla.
3. Blend/process until smooth and you can see tiny flecks of dates dispersed throughout.
4. Spoon desired amount to a cup of hot coffee.
5. Sit back, put your feet up, and enjoy the heck out of it.
