Hello, cool cucumbers.
I like you.
On your own, in a powerhouse antioxidant smoothie, or with some vinegar. You know, good stuff.
But, mix you with a little dill, a little yogurt, and a few other magical ingredients, and well, you're my new favorite.
(Am I the only one who talks to my food? Nah. Surely not.)
This is such an easy recipe. Really easy. And good. So do yourself a favor and make this. Tonight. Or tomorrow. It's good on its own as a light snack or as a side to a full-fledged grilled kind of meal. You know a summer-time, warm-weather, eat-outside kind of meal.
Cucumber Dill Yogurt Salad
*based on She Wears Many Hat's recipe
*Note: Keep all cold ingredients as cool as possible prior to serving to keep the flavor crisp and bright.
1. Put the cucumber pieces into a large mixing bowl.
2. Add the remaining ingredients and toss until the cucumber pieces are well-coated.
3. Adjust spices to taste if necessary.
4. Serve immediately.
